Two Bosses

In Washington, a food trailer is classified as a “mobile building.” This means you have two “bosses” you have to please before you can start doing business.

  • Labor & Industries (L&I) – L&I inspects the “bones” of the trailer. They care about plumbing, electrical, and structural integrity.  You need an L&I insignia before you can even apply for a health permit.
  • The Health Department – The Health Department inspects food safety practices, temperature control, and hygiene. 

The Good Concession Trailer is designed as a conversion vendor unit that respects both.

Sources of Struggle

Most inspection failures aren’t about the food. They’re about the environment. Common culprits include:

  • Porous surfaces. Wooden or plastic counters can harbor bacteria.
  • Inadequate lighting. Dark corners mean places where grime can accumulate because it goes unnoticed, especially when the day gets busy.
  • Poor plumbing. Many trailers lack dedicated handwashing stations and don’t provide hot water.

Our trailers are engineered to meet the Washington Administrative Code requirements for a food warming trailer. Food prep trailers come with an entirely different set of requirements.

  1. Professional hygiene: sinks & plumbing. Washington law requires a dedicated handwashing sink. Our trailers come with plumbing hookups and deep sinks that are already integrated into the build. We can add 3-compartment sinks for ware-washing whenever they will be required.
  2. Surface integrity: stainless steel everything. Our stainless-steel countertops offer more than a professional look. They’re the gold standard for sanitation because they won’t scratch like plastic or rot like wood. They’re super easy to wipe and to clean. Bacteria has nowhere to hide.

A Key Caveat

Good Concession Trailers are designed to serve as food warming concession trailers, not food prep trailers. This means they are not equipped with Type-I hoods or fire suppression systems. 

While this means you won’t be running a commercial grill, you actually gain a massive strategic advantage.

In many Washington counties (like King or Snohomish) businesses focusing on Level 1 or Level 2 “low risk” permits like coffee stands, crepe stands, shaved ice stands, or pre-packaged food stands often enjoy lower permit fees and faster approval processes. You aren’t dealing with grease-laden vapors. You’re not navigating complex fire codes.

You can use waffle makers, hot plates, coffee makers, quesadilla makers, and other common countertop kitchen appliances with ease thanks to our built-in electrical system. If your operation requires mostly shelf-stable foods or commissary-prepped foods stored at safe temperatures, then a Good Concession Trailer might be right for you.
